Gluten Free Carrot Cake Recipes

Wheat Free & Gluten Free Carrot Recipe Ingredients:

  • 150g carrot (grated)

  • 115 g low fat spread, butter or margarine

  • 115g fresh dates (chopped)

  • 175g pear (peeled, cored and pureed)

  • 3 eggs (beaten)

  • 175g gluten free flour

  • 2tsp ground cinnamon

  • 2tsp baking powder

  • ˝tsp mixed spice

  • 1 tsp grated nutmeg

  • ˝ tsp salt

Sugar Free & Gluten Free Carrot Recipe Preparation:

  1. Line a  6" spring form cake tin with baking parchment.

  2. Preheat oven to 190°C

  3. Cream the low fat spread, butter or margarine in a large mixing bowl, gradually beat in the eggs.

  4. Mix in the carrot , dates and pear.

  5. Sift the gluten free flour, baking powder, spices and salt, then gently fold into the fruit mixture.

  6. Spoon the mixture into the cake tin and bake for 55-60 minutes.

  7. Remove cake from tin and allow to cool.

  8. Serve with whipped cream, ice cream or Greek yogurt as a refreshing dessert after dinner.
